Under Banners → Text & Copy, you can edit:

• Headline, usually one short sentence (e.g., “We value your privacy”)
• Description, 1–3 sentences explaining what cookies you use and why
• Category descriptions, what each cookie category means
• Footer links, Privacy Policy, Cookie Policy etc.

Keep the description honest and short. Pre-checked boxes, vague language (“We use cookies to enhance your experience”), and walls of legalese all reduce trust and consent rates.
